Burgess Cellar's Library program continues with this, the 1994 vintage. They hold a small percent of the bottled Cabernet Sauvignon back until it is at least 10 years old. This concept demonstrates that their mountain vineyards have the ability to age under proper cellar conditions. The aged wine then displays the characteristics of Cabernet with bottle bouquet. Their Library release wine now has that quality that only Cabernet Sauvignon kept under ideal conditions can provide ---the cedar, leather, chocolate, and pepper flavors and aromas. The vintage of 1994 was excellent for their Cabernet harvest. The summer was warm and harvest began about two weeks earlier than normal. This assured full maturity and outstanding complexity. There are layers of aromas balanced with Cabernet Sauvignon, Cabernet Franc and Merlot, along with complementary French Oak.
